A Roman speciality, grattachecca takes its name from the verb "grattare" (to scrape) and "checca", the Roman term for a block of ice. Used to keep food and drink cool before modern fridges existed, its main ingredient is ice, scraped by hand with a steel scraper.
The shavings fill the glass, then syrups or fruit purées of your choice are added, along with delicious pieces of fresh fruit to finish.
